I watch my weekly ‘Cooking with Florence’ telly spot. jotting down all ingredients and watching Florrie’s highly-tuned skills. She makes these omlettes a la Florrie. Takes me an hour to make one. She says (as you do) make my omelette in 10 minutes. Am I doing something wrong?

I have a second cousin called Florrie….I hope that is not her….don’t listen to anything she says…There is a secret to making the perfect omelette…she doesn’t know and I’m not telling !
