I am an unabashed meat eater. It’s probably not very healthy for me, but I’m not losing any sleep over my dietary habits.
My daughter is a vegetarian, which I, as someone who has eaten meat all my life, find a bit eccentric. But hey, whatever floats your boat, right? I mean if someone wants to sing for their supper, who am I to criticize?
But if you’re going to eat steak, there is only one way to do it: medium–rare. When I was growing up, my father insisted that my mother prepare any meats we ate to be well-done. Even the slightest hint of red or pink in the meat would result in my father demanding that my mother stick the meat back in the oven for further cooking. As a result, I grew up with that same preference for well-done steak as my father had.
But one day, I was in a fine restaurant with a young lady I was dating, and when she heard me tell the waiter that I wanted my filet mignon prepared well-done, she was aghast “Please,” she said. “I beg you, order it medium-rare. You won’t regret it.”
The waiter smiled and said, “She’s absolutely right, sir. Besides, our chef will not prepare, and I won’t serve, a filet mignon well-done.” In addition, I really liked the girl I was dining with, so I acquiesced.
When the steak was served, and I was amazed. It was so tasty, so juicy, so delicious. By the time I finished eating that piece of meat, I felt like I was experiencing a sexual climax.
(Okay, that might be a bit of an exaggeration, but how else was I supposed to fit the word “climax” into this post?)
So tell me. If you are a meat eater, how do you like your meat to be prepared?

I can no longer eat meat from any animal that lived on 4 legs — when I could, I loved med rare or rare beef and lamb. I’d eat pork med or well done, largely because it was dangerous not to when I grew up.

Steak is beef in selected strips or cuts, usually half an inch to an inch (or two) thick.
The photo, at the top of this page, is of a cut of steak then sliced in even smaller strips.

There are only two ways to eat a steak: medium-rare and rare. I used to be a strict well-doner myself but when my friend let me try a bite of his rare steak one night, I couldn’t believe how much flavor was in there. And a good steak never needs steak sauce. I love A1 but I use it on burgers- never steak unless it’s not good. I don’t eat steak a lot but when I do, yes. It needs plenty of pink. Well done kills the flavor. I totally agree. My mom always used to cook steak very well-done under a broiler. If my dad cooked steak, it was on a grill outside and something like medium. But they also took me to a very nice restaurant for a series of weeks; my dad had gotten a deal — to a St. Louis attraction called Top of the Tower. There, we ordered medium-rare filet. I also learned, there, what a real Caesar salad is like (with fresh dressing and anchovy), as compared to something only similar almost everywhere now.
I taught my sons to order medium-rare. It was during their childhoods that everyone started saying beef should always be cooked medium, for health reasons (not to be infected with something). My youngest son has a memory, involving steak, of going to his first high school dance and dinner afterward. He ordered his steak medium-rare after everyone ordered medium. Everyone looked at him aghast. But he knew he hadn’t done anything “wrong” — and he thought it was funny.

There’s a burger place near me that only does its burgers medium. I like mine medium-rare, so even though it’s the closest burger place to where I live, I rarely (no pun intended) go there.

Yes, even burgers. You have to make sure you’re in a high-quality place (as I think ground beef is more prone to being old or otherwise not the best).

Pretty much the same story for me; my mom used to cook any cut of beef beyond recognition (to avoid food poisoning, I think) and I did not convert to medium-rare until after I had my children (again, to be safe) and bravely ordered it at a restaurant. At home, I still check the internal temperature, but cook steaks medium or medium-rare.

You have a one track mind, Sight. I’ve had nan — garlic nan, onion nan, aloo nan. But never lentils and flat bread. Maybe I should try medium rare steak and flat bread! 😉

I would definitely agree that most steaks, medium-rare is the best. I would say that going a bit closer to rare is probably a bit better for fillet than medium-rare, just because of how lean it is, and ribeyes actually do better a bit closer to medium to give all that marbling a chance to break down, otherwise it’s a bit chewy, and definitely not in a good way.
I think one of my favorite quotes about steak, though I’m not sure even where I remember hearing it, much less who said it, is, “A steak that’s well done isn’t.”

How do I like my STEAK prepared? (because “meat’ sounds so darned suggestive) Same as you. Medium rare. Not oozing blood, but not burnt to a crisp…just juicy and a bit red on the inside, while succulent and brown on the outside. Damn. Now i’m going to have to go out and buy myself a steak.

Definitely love a medium rare steak! There used to be a restaurant in town that had fillet so tender you could cut it with a fork. Unfortunately they closed a couple of years ago. But especially if I may take home some of the steak to eat later, it has to be medium rare that way reheating it will not over cook it. YUM!

Fandango, do you ever use spices on your steak when marinating it, grilling it or when you are ready to eat it?

Yes. Usually garlic and onion powders and seasoned salt. Sometime I marinate it in teriyaki sauce and if I want to add some bite to it, I’ll add Montreal seasoning.

Steak tastes MUCH better, in my opinion, when it’s rare or medium rare.

I’m not so much into hot, spicy sauces, but my son is. He puts Sriracha sauce on just about every food he eats. I’ll share your post with him.
